My creation! Four layers of supreme awesomeness!

My House!

Address:  (No really, I cooked at my house) But featuring the incredible creations of: Cappello’s Gluten-Free Pastas (http://cappellosglutenfree.com)  Mini Moo Goat Cheese (http://minimoosandkidstoo.com),  Difranco’s Sauces (http://www.difrancos.com), and AikoPops (http://aikopops.com).

For the last two years, my sad, little,  gluten-free, Italian heart has been searching and searching for a gluten and dairy free option to pasta, so I could eat the food of my roots, once more.  I had run into poor substitutions made of soy, rice or quinoa.  All had their downfalls, some would be to tough, others to grainy, but in general they all kinda tasted like ass. I was like Goldie-Marie Locksinni looking for my perfect bowl of porridge…. Or Creamy Alfredo. But then, low and be hold, I started teaching yoga, on Saturday mornings, at the Denver Urban Homesteading.  The DUH is Denver’s indoor farmer’s market and this Italian, allergy-prone princess’ new found paradise.  A whole, local, organic, market full of goodies that fit all my allergy needs. It didn’t take long for me to scout out all the yummiest foods and best looking vendors.

Let’s make a long story short and get to the good part.  I have been determined to find a way to cook my own, delicious, allergy-friendly lasagna, since I was diagnosed, two years ago.  When I met my homies at the DUH, I finally felt brave enough to host an Italian dinner at my own home.  So without further adieu, introducing the four fabulous vendors that provided the amazing ingredients that fed myself and my friends at the best Italian dinner party I have hosted in two years:

In the first corner, using his grandmother’s recipes, this tall, beautiful Sicilian

Difranco’s Sauce

stole my heart with his red sauce and his amazing eyes, Ryan Difranco! Coming from a picky Italian eater, Ryan’s sauces are incredible.  I used the red sauce as the base for my lasagna challenge.  It was perfect! The taste was fresh and there wasn’t that sweet “sugar-added” taste that you usually get from restaurant or jarred sauces.  Oh and he will deliver to your house, too!  Ryan’s sauces get an “A+”! Ryan (himself) gets an “AAA+”

Next, our dairy selection, brought to us by Mini Moos Goat Dairy.  I thought the cheese section of this meal would be the hardest, because nondairy cheeses are disgusting and non-cow cheeses sometimes leave a strong hair and stable taste in you dishes.  But the Cheese Man at Mini Moos suggested I try substituting the creamy chèvre for ricotta.  Normally, I used ground pepper, egg, and cottage

Mini Moos Chevre and Semi-soft Goat Cheese

cheese as a ricotta substitute, because I don’t care for ricotta.  I absolutely love Mini Moos’ chèvre and had used it as a cream cheese substitute, since I first went off cow-dairy.  Mini Moos’ products, including their milk, never taste earthy or like a mouth full of goat hair.  They are always creamy and light, so I decided to take Cheese Man’s advice and go for the substitution.  I also went with a semi-soft garlic basil goat cheese, to substitute for mozzarella.  In the end, the semi-soft cheese created a crispy shell on top of the dish, that was like a piece of crunchy, garlic heaven.  Mini Moos gets an “A+”

Now for the most important part of any lasagna, the pasta.  Made special for me by Stacy, who runs and owns Cappello’s Gluten-free Pastas.  She is amazing!  Honestly, no one could tell the difference, and I hangout with some food-snobbyCappello's Gluten-Free Gnocchi people.  The noodles kept their structural integrity and at the same time were not grainy or bitter-tasting.  Also, she did not cut the shells into the normal lasagna strips, they were in sheets for me to cut myself.  This made it so easy to bake in the only baking dish, I own, which is oddly shaped.  Stacy and her biz partner Ben are absolute geniuses and shamelessly, I worship the gluten-free path of pasta they walk along.  Cappello’s gets an “A++”

To finish off this unbelievable meal, I brought out the big guns… Or pops, I

Aiko Pops- Avocado Orange

suppose.  Aiko Pops!  Holy Mother of Popsicle-loving God, these things are incredible!  Not to mention Aiko Pop’s owner has hypnotizing eyes, which he probably could use to sell me my own car, if he looked at me long enough.  These pops are gluten-free, mostly vegan, and out-of-control yummy!  They have favors like Apple-Wasabi, Vanilla-orange, and my favorite Choclate-bacon-sea-salt.  The first time I bit into the CBSS flavored pop, I said (and I quote) “Holy shit! I never have to date again!”. My guests were equally as thrilled and I am stoked to say that I will be ordering Aiko Pops mini pops (which are adorable and genius) for this pop-star, princess’ , upcoming 30th birthday!  Aiko Pops gets an “A++”!

Though, I’m not having lasagna-parties every night this week, you can come visit me and the other four fab vendors and sample all the yummy treats, every Saturday at the DUH.  The DUH is at 2nd and Santa Fe!

And remember, whether you can eat anything or everything, are gluten-free, meat-free, or whatever else; Life is to short to not live and eat deliciously!

Cheers,

Gia

Ginger-Spiced Fruit with Coconut Sorbet

February 13th 2012 Shout Out goes to:

Phat Thai (Denver)!

Located at: 2900 E. 2nd Ave, Denver

Link: http://www.phatthai.com

I have been promising for weeks that I was going to come visit Phat Thai Denver.  I’ve been promising, pretty much, since they opened, last month.  Today, I fulfilled my promise (though I, originally, was looking to shove my snout in a big bowl of tofu pho), my wonderful friend and foodie companion, Whitney, convinced me that we still had a date to visit two of our favorite Denver chefs, Lee and Manny.

I love Thai! So, what the hell, I was in (plus, I adore Manny and Lee)! I really didn’t know what to expect. All the Thai food I had experienced in the past was quite ethnic in its dishes, inexpensive in its pricing and “dive-y” in its atmosphere.  But we were heading to Cherry Creek, where “inexpensive” means a pair of jeans for $600.00 and the only “dive” you will find is the Cherry Cricket (a Cherry Creek fixture known for their amazing burgers).  Needless to say, my expectations were set on “snoo-tay!”

Parking sucked and as we pulled up we were hit with the reality that they may not even be open, since it was 3:00 PM and many restaurants in the area close between lunch and dinner! Yet, I was quickly proven wrong, as I would be many more times throughout our dining adventure and they were, indeed, open!  I was the first one in the door (Whitney got stuck parking and I bailed).  The atmosphere was a bright, spacious feel, with an open kitchen and I was automatically greeted by Chef Manny.

After “hellos” and “hugs” were out-of-the-way, Whit and I settled in at the natural-wood, wrap-around bar that was the center focus of the establishment.  It should be noted, now, that atmosphere and service play an equal part to my foodie judgement of a place.  This place had an upscale, urban beauty and even though the staff figured out we knew some of the employment (I’m not quiet about my greetings and hugs…. Hugs for everyone) they were wonderfully friendly and well versed in their menu.

The menu had a slew of allergy and vegetarian option next to each dish and anything I had questions about our pretty-eyed bartender, Ricky, was eager to find the answer to for us.  As a striving “Green Princess”, I was quite impressed that a good amount of their ingredients were organic and brought in locally, but my most mind-blowing, mouth-gasm moment of the meal, was when we got our papaya salad.  Though the salad was prepared identical to my favorite, ethnic, dive, Thai place, it was paired with Phat Thai’s own little, culinary twist.  First, the spice was perfect.  We got it prepared medium, which brought out the flavor of the salad, but didn’t blow my face off in the process.  Second, it was accompanied by the most amazing, sweet, coconut milk, steamed rice.  The combination of the two flavors was brilliant! The mouth-gasm it brought on was comparable to laying on a hot, tropical, beach, in the dead of night with a spicy, gorgeous, accented man, feeding me fresh papaya.

Lastly, my final way of judging a new dining spot is to check out the bathroom situation.  I don’t know, maybe it’s a girl thing or an OCD thing, or just a “me” thing, but bathrooms matter.  Theirs were pretty cool! They had the dual flush toilets, to save water and very clever, framed, hand-washing signs, written in Thai…yet another “cool point” and “green point” for them.

I guess what I’m getting at is, I retract my past avoidance of Cherry Creek and would go back to Phat Thai (and not just for Lee, Manny, or pretty-eyed, bartender named Ricky).  The food was great (and decently priced), atmosphere inviting, service above the top and bathrooms “green!”

FYI they just started their new, rockin’, happy hour menu! If you go, call me, so I have a reason to go back and see Ricky!

Luv y’all!

Gia

Jalapeno Sashimi

February 3rd 2012- Shout Out:

The Sushi Den!

Located at: 1487 S. Pearl St, Denver
Link: http://www.sushiden.net
Ok, I am biased toward this particular dining establishment, but even before I had personal attachment to it, I placed it in my 5 top food picks of Denver.  This food is crazy-wonderful.  I lived in California for five years and this is by far the best sushi I have ever had.  Fish is flown in daily with favorites like hamachi (yellow tail) and shake (salmon),as well as exotic catches, like: sayori (needle fish) and akamutsu (gnome fish). It’s nice having a place that has something that will please the most exotic of palates, as well as your inbred, toothless Uncle Bucky.  The atmosphere is chic, yet not to fancy, so you can go in dressed to the nine’s and Uncle Buck won’t feel out-of-place in his overalls.
More so, (perhaps even above the quality of the food) is the service.  The staff at the Sushi Den take pride in what they are putting in front of you.  Each server is happy to suggest something amazing that will make dining that much more enjoyable.  Their knowledge of the menus and where the product comes from is outstanding.  This is why The Sushi Den is in my top picks for Glutard and Lactard Friendly Spots.  If you are faking an allergy, they will know it, because eating soy sauce with a wheat allergy is a dead give away that you don’t actually have a problem.  Because they take allergies and modifications so seriously, I trust them to order and prepare for me a meal that will most definitely send me into a “food-gasm” and not into anaphylactic shock.  It is refreshing to encounter a staff so well versed in every aspect of the job.
Notable people to look out for when visiting The Sushi Den: The owner Toshi-san.  I have a great respect for this man, especially after the quake, last year, in Japan. Toshi-san has successfully run the Sushi Den for over 20 years and is always up for a new challenge and way to improve his company.  After the quake in March 2011, Toshi-san donated some $50,000 of profit to the Red Cross for relief efforts.  I tip my hat to you, sir.
Next, the beautiful hostess Tammara, she is always on for a good discussion, while you wait for your table and she can hold her Down Dog for over a minute… Grrrr.
The amazing Whitney, who is one of the best and tallest servers in the house.  She is well versed in allergy information, as well as drink pairings and if you are really nice, she will introduce you to the most amazing sushi roll you’ve ever had.
Jason Cole, great server and also the guy you want to bring with you to the opera, followed by drinks and trivia.  This kid knows everything (example: One evening, while he was serving myself and some friends, he proved me right, by knowing that a group of crows is known as a “murder”).  That is quality service!
The “Japanese-Elvis-Dracula-James-Bond” General Manager, Takuma-san.  One of the best looking parts of the Sushi Den, he can be found, most nights, greeting guest, running frantically around the restaurant, or standing omnipotently writing down ways to perfect the job.  This guy is the embodiment of job dedication and commitment, but don’t get to close ladies, remember Happy Buddha say: “Even though white tiger beautiful, reaching into cage will make snack time out of arm!”
Last, but definitely not least, AGM Tony and long time employee Travis.  Hot, hot and hottest! Enough said! These boys are eye candy for ladies and gents and definitely know their shit!
And of course, if you’re lucky, you may run into me there, and we can share a wheat free sake! Kampai!
